CMake: Set QDOC_PROJECT_ROOT for doc targets
QDoc warning logs use absolute file paths that make logs non-portable
across build environments. This limits usefulness in CI systems where
paths vary between machines.
This change sets the `QDOC_PROJECT_ROOT` environment variable to the
module source directory when invoking QDoc. This enables QDoc to
generate relative paths in warning logs, making them portable across
different build environments.
