We have some production stored procedures which need executing in the middle of the day using our on-prem servers, is it possible for these to be trigger via an Azure Data Factory Pipeline on our Azure Platform?

We have linked services set up to the on-prem database using a Self Hosted Integration RunTime

Yes, you can trigger onprem database stored procedures via stored procedure activity or the script activity.

As stated by you, as database is on prem you would need a SHIR for your linked service
