I have some client data that is filled with PII information. I want to use Azure or AWS LLM models, but I am afraid they will use this data for further training or send it to some third party. Could anyone suggest a solution to make these calls compliant?

you can use a audited (that certifies that no data is used for further training) provider but you have to trust the auditor. Alternative you can filter out the PII and replace it with anonymised data if that is possible.
